Bicol Express

Bicol Express A recipe that packs a punch with its intense heat and not for the faint hearted, a fiery dish containing hot and spicy pork cooked with coconut Milk, Bogoong (shrimp Paste) and most important hot hot chilli peppers.
I have heard that it has been known to forget the meat and just have the peppers Phew!

Ingredients

  • 2 pounds (almost a kilo) pork shoulder, cubed
  • 4 pcs.long green chili peppers, (seeded) or Scotch Bonet
  • 2 cans (13.5 ozs.) coconut milk
  • 3 cloves garlic, minced
  • 1 medium onion,chopped
  • 2 thumb size ginger,cut in strips or shredded to make 2 teaspoons
  • 2 tablespoons shrimp paste or bagoong alamang
  • salt and pepper to taste

Preperation:

  • Should take 10 minutes to prepare and about 30 to cook!
