Chicken Adobo(Adobo Manok)

Chicken Adobo(Adobo Manok)Adobo is made from chicken, pork, squid (pusit) or vegetables stewed in vinegar, soy sauce, garlic, peppercorns and bay leaf. It is believed that this dish was derived, and then, Filipinized from the Spanish adobado, a more complicated preparation soaked in garlic and oil.

This recipe is for our most famous dish, Chicken Adobo "Adobo Manoc" To make things easier we have added this video we found on YouTube.

A very popular cooking process in the Philippines, the most famous is of course chicken adobo which is a simple yet tasty dish.

Ingredients

  • 2 lb chicken pieces, cut up or whole
  • 1 head of garlic, coarsely chopped
  • 4 Tbsp soy sauce (or add more to suite taste)
  • 1 tsp ground black pepper
  • 2 cups water
  • 1/2 cup vinegar (rice vinegar or white wine vinegar preferably)
  • 2 bay leaves
  • 2 Tbsp cooking oil
