Pancit Palabok (Noodles)

Pancit Palabok This Filipino noodle dish is originally from China. Palabok are normally made from thin rice noodles and are covered with a bright orange Shrimp sauce. Appart from it’s sauce Palabok has similar ingredients to another Filipino dish called Pancit Canton.

Ingredients

  • 8 Cups of water
  • 1 cup of mango sprouts
  • 1lb Pancit Bihom (Rice Noodles) or Palabok Noodles

Sauce:

  • ¼ cup atsuete (Annato) seeds, soaked in water
  • ¼ cup of water
  • 2 cups shrimp juice
  • 6 tbsp of all purpose flour
  • ½ cup of water
  • Salt and pepper to taste

Toppings

  • 1 cup of cooked Pork, diced or strips
  • 2 pieces of tokwa (Beancured) cubed
  • ½ cup of flaked tinapa (smoked fish)
  • ½ cup pork cracklings (chicaron)
  • 2 boiled Eggs sliced in to wedges
  • ½ cup of Shrimps cooked and shelled
  • ½ cup of chopped green onions for garnish
  • 1 tbsp of fried garlic for garnish
  • Kalamansi (Philippine lemon/ lime)
